TROUT WITH VEGETABLES AND BABY SPINACH

INGREDIENTS
- Trout fillet -
- Quinoa - 3 tbsp
- Olive oil - 2 tbsp
- Lemon juice - ½ pc
- Carrots - 1
- Red and green pepper - 1 pc
- Zucchini - 1/3 pc
- Salt and pepper
- Fresh thyme - a few leaves
- Baby spinach (fresh) - 1 handful
Directions
1. Wash the fillets and check for any left bones. Leave the skin
2. Season the fishs with salt, pepper and thyme and sauté it for a few minutes (on each side) in strongly heated frying pan
3. Cook the quinoa and then strain it.
4. Cut the vegetables into same size cubesand then add then into the hot pan with the olive oil.
5. Once you are done with the vegetables, add the quinoa and season them with salt and pepper (according to your taste)
6. Season the baby spinach with olive oil and a little lemon juice ( like a salad)
7. Serve the fish in a proper plate with teh fresh spinach on top and some lemon
